Family Dinner

Last Saturday, we hosted our first family dinner complete with 5-course meal + fruit + dessert. I can’t really take credit, though, cause my mom came up with the menu, went shopping with me, and basically did most of the cooking. Thanks, Mom! : ) Eric and I were merely the sous chefs. Still, it was a lot of fun!
The menu:
- Cucumber mushroom salad w/ papaya seed dressing
- Smoked salmon seaweed wraps
- Shrimp and tomato
- Asparagus w/ cream of mushroom
- Curried oxtail and carrots

Last Sunday after church, instead of taking our usual route home via the highway, we headed east and drove along the coast… stopping at Waimanalo beach and then at a lookout point near Makapu’u. The scenes and colors were seriously breathtaking. Look at these shots… they’re straight out of the camera!

Website Update & Finding Rest

Hello friends, I’m excited to share with you what I’ve been working on for the past couple of days… an update to our website! Check it out here. Please let me know if you have any suggestions/comments… Eric has already given me a few to work on, but I’m thrilled regardless at what a big improvement this is over my previous attempt!! Go me!! Haha. AND, I am so happy to incorporate a few photos of our friends (their babies and tummies, to be exact). You might also notice the banner on the bottom, which says I created the site using Showit. For those of you looking to design a website, give Showit a try… the software is tricky at first, but once you get the hang of it, it’s pretty awesome. Plus, it’s free!
A few people have asked what I’m up to these days, in the “down time” I have before I begin teaching in January. I’m never sure how to answer, cause there isn’t one thing in particular I do, or any sort of routine that I’ve established. So I usually reply “odds and ends”… which is true… like updating the website, hanging with my mom, reading, laundry, watching glee. The truth is, I think I’m learning how to rest. I think God gave me this period of 3 months to simply rest, relax, and sleep (love the sleep!), perhaps because the pace will pick up in January and who knows when my next “break” in life will be, or perhaps so I can cherish the simple things in life, or perhaps because He knew my tendency to become so productivity-oriented that I lose sight of Him in the busyness of life. This down time has been both wonderful and aggravating… wonderful because it’s like a super, super long weekend, and I actually have time to think, reflect, pray… how often I have longed for free time, and now I have it!!… but aggravating as well, as I wrestle with the need to feel productive, fight the urge to busy myself just to satisfy that need, and consequently, ponder the meaning of life and my purpose on earth. So ironically, in this period of being “still” on the outside, I believe God is very much at work on my inside, calming me and bringing me back to the basics of faith and of life. For one thing, He loves me not because of what I do or what I accomplish today, tomorrow, in life… no, He loves me (and you) unconditionally, because he is Love. And for that, I am thankful.
